A new report regarding food consumption may reveal a deeper trend.
The U.S. Department of Agriculture’s National Agricultural Statistics Service (NASS) released the results of the 2021 Organic Survey, which show total sales of $11.2 billion in organic products, an increase of $1.28 billion, or 13%, from 2019. There were 17,445 certified organic farms, a 5% increase from 2019.
Sarah Manuel of Farmer Meets Foodie has noticed this trend but thinks there is more to it.

I think people have a genuine desire to become connected with the food that they’re eating, and what they’re putting in their bodies. People want to know, what is this and where did it come from.
